Cheese

There are many different types of cheese, including hard, soft, smoked, and cured. The process of creating them all is similar. Regular cheese is made by heating milk and adding acids or rennet. Then, it is allowed to coagulate. It is then left to age for several days. During this time, microbes and enzymes break down the casein protein to form a complex mix of fatty acids, amino acids, and amines.
