Sugar-Free Vanilla Pudding

Ingredients
  

  • 1/4 cup heavy cream
  • 3/4 cup unsweetened almond milk
  • 1/4 cup powdered erythritol
  • 2 tbsp gelatin
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions
 

  • Bloom gelatin in milk. Heat cream and sweetener until dissolved. Remove from heat and whisk in bloomed gelatin. Fold in vanilla. Chill pudding in cups or bowls until set, 2-3 hours.
