Sugar-Free Vanilla Pudding

Ingredients

heavy cream
3/4
cup
unsweetened almond milk
1/4
cup
powdered erythritol
2
tbsp
gelatin
1
tsp
vanilla extract
Pinch
of salt
Instructions
Bloom gelatin in milk. Heat cream and sweetener until dissolved. Remove from heat and whisk in bloomed gelatin. Fold in vanilla. Chill pudding in cups or bowls until set, 2-3 hours.
