Nabulsi Cheese

Nabulsi cheese is a type of white brined cheese made from sheep's milk or goat's milk in the Nablus area of the West Bank region. It has a smooth, dense texture and salty flavor. Traditionally it is shaped into squares or triangles, aged in brine, and preserved in olive oil, spices and chili paste. A key characteristic is that unlike most cheeses, Nabulsi cheese does not melt when cooked. It is most often used for snacking, in salads, or fried.
