Beer Cheese Soup Recipe

Ingredients
  

  • 2 tbsp butter
  • 1/4 cup all-purpose flour
  • 3 cups chicken broth
  • 12 oz beer (lager or pale ale)
  • 2 cups shredded cheddar cheese
  • 1/4 tsp dry mustard

Instructions
 

  • In a large pot, melt butter over medium heat. Whisk in flour and cook 1 minute.
  • Gradually whisk in chicken broth and beer. Bring to a boil, reduce heat and simmer for 5 minutes.
  • Turn off heat. Add shredded cheddar cheese and whisk continuously until melted and smooth.
  • Season with dry mustard.
