Mochi Cookies Recipe
While the ingredient list may seem long at first glance, making mochi cookies is quite straightforward. You'll make two components - the cookie dough and the mochi filling.
For the cookie dough, you'll need:
- 1/2 cup (1 stick) unsalted butter, room temperature
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 13/4 cup all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1 cup chocolate chips (optional)
For the mochi filling, you'll need:
- 1/3 cup glutinous rice flour
- 2 tbsp powdered sugar
- 1/2 cup milk
- 1 tbsp unsalted butter, room temperature
How To Make Mochi Cookie Dough
Cream together the softened butter and sugars. Beat until light and fluffy.
Add the egg, vanilla extract, and any other wet ingredients. Mix to combine.
In a separate bowl, whisk together the flour, baking soda, salt, and spices.
Slowly add the dry mixture to the wet ingredients. Mix just until combined.
Chill the dough for at least 30 minutes. This helps prevent spreading while baking.
Once chilled, scoop and roll the dough into balls.
Preparing The Mochi Filling
In a microwave-safe bowl, whisk together the rice flour, powdered sugar, and 1⁄2 cup milk until smooth.
Microwave the mixture for 1-2 minutes, stirring every 30 seconds, until thickened.
Add 1 tablespoon of softened butter and mix until fully incorporated. This keeps the mochi soft.
Let the mochi filling cool completely before handling.
Once cooled, scoop and roll the filling into small balls.
Assembling The Mochi Cookies
Flatten a cookie dough ball into a disc.
Place a mochi ball (or mochi with filling inside) in the center.
Pinch the cookie dough up and around the mochi, sealing it inside.
Roll gently to smooth the exterior.
Arrange on a parchment-lined baking sheet.
Bake until lightly browned around the edges, 10-12 minutes usually.
