Almond Butter Stuffed Dates
A quick and easy sweet treat! Medjool dates stuffed with almond butter make a nutritious portable snack.
- 12 Medjool dates, pitted
- 1/3 cup almond butter
- 1/4 cup dark chocolate chips
- 1 tablespoon coconut flakes (optional)
- 1/4 teaspoon cinnamon (optional)
Slice each date longwise to expose the pit opening. Remove pits.
Fill center of each date with 1 teaspoon of almond butter using a small spoon.
Pinch dates gently to seal in the almond butter.
If desired, roll stuffed dates in coconut flakes, cinnamon, or chocolate chips.
Enjoy immediately or refrigerate until ready to eat.
