Almond Butter Banana Bread

A moist and flavorful banana bread made extra nutritious with almond butter. The almond butter adds a wonderful nuttiness that complements the sweet bananas.

Ingredients
  

  • 3 ripe bananas, mashed
  • 1/2 cup almond butter
  • 1/3 cup honey or maple syrup
  • 2 eggs
  • 1/4 cup milk of choice
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon

Instructions
 

  • Preheat oven to 350°F. Grease a 9x5 inch loaf pan. Prepare the pan to bake the bread.
  • In a bowl, mash the bananas until mostly smooth. Ripened bananas provide moisture, sweetness and banana flavor.
  • Mix together the mashed bananas, almond butter, honey, eggs, milk and vanilla.This combines the wet ingredients.
  • In another bowl, whisk together the flour, baking soda, salt and cinnamon.The dry ingredients need to be well blended.
  • Add the dry ingredients to the wet ingredients and stir just until combined.Be careful not to overmix the batter.
  • Pour batter into prepared loaf pan. Bake for 45-60 minutes.Bake until a toothpick inserted in center comes out clean.
  • Allow bread to cool completely before slicing.Letting it cool makes it easier to slice neatly.
