Almond Butter Granola

This homemade almond butter granola is crunchy, nutritious, and naturally sweetened. It makes for a satisfying and energizing breakfast or snack.

Ingredients
  

  • 3 cups old-fashioned rolled oats
  • 1 cup chopped almonds
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup almond butter
  • 1/3 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 325°F. Line a baking sheet with parchment paper.
  • In a large bowl, mix together the oats, almonds, cinnamon, and salt.
  • In a separate bowl, stir together the almond butter, maple syrup, coconut oil, and vanilla until smooth.
  • Pour the wet ingredients over the dry ingredients and mix well.
  • Spread the granola mixture evenly onto the prepared baking sheet.
  • Bake for 30-35 minutes, stirring halfway, until golden brown.
  • Allow the granola to cool completely before eating or storing.
  • Break granola into clusters and enjoy! Stores well in an airtight container.
