Almond Butter Bars

A no-bake treat made with almond butter, oats, dates, and chocolate. Easy to make and perfect for snacking.

Ingredients
  

  • Almond butter - use creamy, unsweetened
  • Oats - old fashioned work best
  • Dates - soak before using to soften
  • Vanilla - for extra flavor
  • Dark chocolate - for sweet topping
  • Flaky sea salt - gives a nice crunch

Instructions
 

  • Soak dates in hot water for 10 minutes. Drain.
  • Make base - Mix oats, almond butter, vanilla, and salt.
  • Press base into a parchment-lined pan.
  • Make filling - Blend soaked dates into a paste.
  • Layer filling over base.
  • Melt chocolate and spread on top.
  • Sprinkle with salt.
  • Chill completely before slicing.

Notes

  • Use Medjool dates
  • Chill overnight for best results
  • Store bars in the fridge
  • Swap any nut or seed butter for almond butter
  • Add mix-ins like nuts or coconut
